WE’RE ABOUT TO LAUNCH OUR NEW MENU!
We’ll have it out on July 6th, available for YOU to order for delivery the following Tuesday! So we’ve been thinking about what was on the old menu, what we’d like to put on the new menu, and what we can change around! And because we loooove to share, we thought we’d start sharing some of the most popular recipes from the old menu! One of our most popular meals on this menu has been our vegetarian gado-gado, based on the popular Indonesian dish of peanut sauce, eggs and noodles. We can reveal to our avid readers that a variation will be on our new menu… with sliced beef sirloin in place of tofu and egg, and full of all those healthy veggies we’re always banging on about! So here’s a recipe for satay sauce that you can adapt for lots of meals! Try it with chicken skewers, or sliced beef and rice, or chuck it through a stirfry! Or how about with noodles, lots of veggies and some tofu?! Or in a chicken roti wrap, with loads of crunchy iceberg lettuce and cooling cucumber? And make sure you dream of sunny climes while enjoying it!
QUICK PEANUT SATAY SAUCE
Like all of our recipes, this one is very flexible! You can leave out the chilli, substitute coconut cream for a richer flavor, or jazz it up with fish sauce and fresh coriander for a more authentic south-east Asian taste!
- Olive oil
- 1 onion, finely diced
- ½ large red chilli, finely sliced
- 1 tsp ground cumin
- 2 tsp ground coriander
- 2 tbsp crunchy peanut butter
- 375ml can light coconut milk
- 1 tbsp brown sugar
- Juice of 1 lime
Fry onion until soft; add chilli and spices, fry until they smell delish. Add coconut milk, scraping up all the flavor from the bottom of the pan, and whisk in peanut butter. Season to taste with sugar and lime juice.
